How To Make Ginger Chews – Ginger Candy Recipe

Ingredients
  • 1lb ginger
  • 4 cups of water
  • 12 ounces of honey
  • 1 vanilla bean
  • Fine ground unsweetened coconut
Instructions
  1. Peel ginger and cut into 1 inch chunks.
  2. Add water and ginger to pot.
  3. Bring water to a boil, turn heat down and simmer for 45 minutes.
  4. Slice open the vanilla bean length wise.
  5. Scrape out the vanilla beans with a spoon. Add the vanilla beans to the honey.
  6. Add honey and vanilla to pot, bring to a boil and then simmer for 45 minutes.
  7. Remove from heat and let sit for 6 hours or more.
  8. Return to boil and simmer for another 45 minutes.
  9. Remove from heat and let sit for another 6 hours or more.
  10. Return to boil again, turn down and simmer for another 45 minutes.
  11. Remove from heat and let sit for another 6 hours or more.
  12. One more time return mixture to a boil and simmer for 45 minutes.
  13. Let sit again for another 6 hours.
  14. Bring it to a boil one more time, then reduce to a simmer. Cook for another 15 to 20 minutes to really reduce that liquid even more. This time being very careful that it doesn’t burn, you’ll want to stir it.
  15. Remove ginger chunks to cookie tray or parchment paper.
  16. Once cooled, roll chucks in the ground coconut to cover.
  17. Place back on cooling try to sit over night.
  18. Enjoy.

  2. What’s up with the ginger candy recipe? Multiple ‘6 hour’ resting periods? The total time from start to finish is almost 24 hours…Is this correct? For that kind of time, must be an amazing recipe…Just checking first…
