Spinach Rice and Shrimp Scallops Salad

An awesome meal doesn’t have to be a full recipe you have to make every time. This meal I just throw together.

We keep individual portioned bags of shrimp and scallops in the freezer, and this week we happened to have made up a batch of rice to last for a few days, and we always have spinach on hand.

Boil 2 cups of water and then add your shrimp and scallops about 1/2 a serving of each, boil for 7 minutes, then drain water.

Heat up and your rice, then plate over spinach.  Add butter and spices of your choice. I always use something spicy like “Slap Yo Momma” Cajun seasoning.

  • Shrimp

  • Rice
  • Spinach
  • Butter
  • Spices
Instructions
  1. Boil 2 cups of water, add a portion of shrimp, scallops.
  2. Heat of some rice.
  3. Add rice, shrimp and scallops over a plate of spinach.
  4. Melt some butter on the rice and add your favorite spices.
