I’ve always wanted to be able to throw together a restaurant worthy salad in a few minutes, especially when I’m out at a restaurant thinking, if I had salads like this at home I’d always eat clean.
But then I get home and the salads just seem to time consuming. Of course I don’t actually try to make them, since my perception is enough to make me procrastinate. This salad, however is easy and fast to make. Trust me. :)
With only 4 ingredients, it takes me about 3 min 20 seconds to put together, when every ingredient is away. Not like some of these cooking shows where everything is nicely measured and out in cute little bowels and then they start timing the prep.
My prep includes stepping over dogs, talking to my husband while asking my 2 year old to stop sticking that toy in her sisters ear.
All while being just a tad anal about weighing my avocado and measuring out my 2 tbls of walnuts. I don’t really care how much avocado there is, I just like to put it in my food app.
But the walnuts are a must for measuring, other wise the $8 container of walnuts will be gone in two days and I’ll have downed and extra 1607 on top of what I’d normally eat, without batting an eye.
I’m sure like many people, whatever switch is suppose to make me want to stop eating when my body has had enough, is very broken.
Which is why at home I do weigh and measure the majority of my food and ever since finding MyNetDiary I track everything, even when I’m out. When you can do a search for Starbucks Cheese Pretzel and it’s in there, there is nothing you can’t quickly add.
Then I just squeeze on the lemon juice from half a lemon and whatever spice I”m into at the time. Which right now is a whole lot of “Slap Ya Mama Cajun Seasoning”. lol The lemon juice makes it even spicier. :)
Sometimes I’ll often add a sliced up hard boiled egg as well. Then the total prep time is 4 minutes and 14 seconds.
- Handful of baby spinach
- 1 small avocado or 1/2 a large avocado
- 2 tbls of walnuts
- Juice of half a lemon
- Fill your bowel with spinach
- Slice up avocado and add to spinach
- Add walnuts
- Squeeze on lemon juice
- Add spices to taste
- Enjoy
